Erythritol and stevia blends in coffee: a taste and aftertaste trial
Comparing an erythritol and stevia blend in coffee is not a single tasting. The blend meets a bitter, aromatic, sometimes milky and sometimes iced base, and each of those conditions changes what you notice first and what lingers. The practical way to judge fit is to fix the coffee recipe and serving temperature, record exactly what was dosed, and score sweetness, mouthfeel, cup appearance and aftertaste as separate observations.

Start with the coffee, not the sweetener
Write down the brew recipe before any sample is opened: coffee type or blend, grind, water, brew strength, drink quantity and serving temperature. Keep that recipe identical across samples in the same comparison. If you change the coffee, you have changed the test. Treat plain hot coffee and actual iced coffee as separate tests. Iced coffee adds dilution from melting ice and a colder serving temperature, and both affect how sweetness and bitterness are perceived. Do not pool their scores. If your buyers use milk coffee, run it as a third base with its own recipe, so the comparison reflects the actual milk-containing base.
Record dose and sample identity before tasting
For each cup, record the sample name, blend composition as supplied, lot or sample code, and the amount used. Record mass where practical; if using sticks or scoops, also identify their fill or measured mass and whether the full amount dissolved or left residue. If you adjust the dose to reach an acceptable sweetness level, compare the accepted doses, not equal masses. A blend that needs a different amount to reach the same perceived sweetness is a different result, and the record should show that. Never carry a dose from one sample over to another as if the blends were interchangeable.
Score sweetness first, then the lingering taste
Taste in a fixed order. Score initial sweetness first, while the sip is still in the mouth. Then score the coffee character — does the blend sit on top of the coffee or behind it? — and only after swallowing, score the aftertaste at defined checkpoints you choose and keep for every sample. Keep mouthfeel and cup appearance as separate lines. Mouthfeel covers body, coating or dryness; appearance covers dissolution, foam, cloudiness or sediment. Mixing these into one overall score hides the reason a sample was rejected. Expect coffee bitterness to shift between cups for reasons unrelated to the sweetener: brew variation, milk, temperature and time since brewing. Note it, but do not attribute every change to the blend.
A simple record format
A workable sheet has one row per cup and columns for: date; coffee recipe code; serving temperature; base (hot plain, iced, milk); sample code and composition; amount dispensed; dissolution notes; sweetness score; coffee character score; mouthfeel note; appearance note; aftertaste note with the checkpoint; and an accept or reject line. Add a free-text column for anything unexpected. The notes are often more useful later than the scores, because they explain why a sample was accepted or set aside.
Define acceptance in your intended drink
Acceptance should be written against the drink you actually plan to sell or serve, not against another sweetener. State what is acceptable for sweetness level, for how the coffee reads, and for how long the aftertaste may linger, in your own terms. The goal is not to prove one blend superior. It is to decide whether this blend, at an accepted dose, works in this coffee, and to record the conditions under which that decision was made.
Use the result for the next decision
Use the accepted dose and the tested preparation to draft the serving instruction for the pack you are evaluating. If the same blend needs different guidance for hot, iced or milk coffee, say so clearly rather than forcing one number to cover all three. If the sample fails, the record identifies which observation needs investigation; it does not by itself prove the cause — which is what you take back to the supplier. If it passes, the record is your basis for a specification discussion, not a universal instruction for every coffee format.
