Start with sucrose in your original formula. Set the portion you want to replace, then estimate a theoretically equal-sweetness amount of one ingredient or a named blend. Check the mass gap before treating the result as a formula.

YOUR FORMULA WORKSHEET
01 / Original formula & target

Before processing; includes the sucrose entered below.

Use sucrose weight, not total sugars from a nutrition label.

0–100%. This is an ingredient target, not a nutrition-label claim.

02 / Replacement ingredient or blend

Enter a factor for the as-received ingredient or complete blend, not just its active component.

03 / Dry matter & cost comparison — optional

These inputs do not change the theoretical dose. Leave unknown values blank.

As-received material. No dry-matter value is assumed.

From its specification or measurement; purity is not a dry-matter value.

Your quotation, on the same as-received basis.

Editable ingredient price; no finished-formula cost is implied.

The six preset prices are indicative EXW references confirmed 24 Oct 2026. Confirm current prices and scope. No sucrose or custom-blend price is assumed.

04 / Details to keep with your trial — optional

Ingredient and label suitability need market-specific review.

Keep the real base and process with your result.

The calculation, in plain terms

Removed sucrose = original sucrose × target reduction ÷ 100. The replacement weight is scaled from a 1 kg sucrose-equivalent reference: replacement = removed sucrose ÷ relative sweetness factor. Retained sucrose = original sucrose − removed sucrose. The original formula batch includes all its ingredients before processing.

Mass gap = removed sucrose − replacement. Batch before correction = original batch − removed sucrose + replacement. A positive gap means less mass; a negative gap means excess mass. The tool does not choose an adjustment ingredient or change the rest of your recipe.

If both dry-matter values are known, dry-solids gap = removed sucrose × its dry-matter fraction − replacement × its dry-matter fraction. This compares only the removed and added materials. It does not estimate other ingredients, evaporation, processing yield or the solids of the complete finished food.

If both prices are entered, cost change = replacement weight × replacement price − removed sucrose × sucrose price. A positive change is an increase. Compare the complete formula cost only after the replacement, any bulk adjustment and the actual dose have passed your trial.

FROM NUMBERS TO A SAMPLE

Keep sweetness and structure separate.

Hengliyuan's application workflow starts with the product, current control, target change and ingredient restrictions. A high-intensity sweetener can address sweetness while leaving a substantial mass or texture gap.

  1. Confirm the market, food category, grade, complete composition and sample version.
  2. Keep the current/sucrose control. Compare the actual dose in the real base and process.
  3. Check application-specific questions: fermentation and volume in bread, acidity and aroma in drinks, or freezing and melting in desserts.
  4. Record sensory and physical observations before the next sample or quotation discussion.

BEFORE REFORMULATING

Useful answers.

01Does equal theoretical sweetness mean a finished recipe is ready?

No. The calculation matches the sucrose-equivalent sweetness amount under a linear factor. Texture, fermentation, color, freezing, stability and the perceived sweetness at the final concentration still need product trials.

02Why can the replacement weigh more than the removed sugar?

A factor below 1 requires more replacement material for the same theoretical sweetness. A negative mass gap means the revised batch has excess mass to resolve; it is not an instruction to add a carrier.

03Does the mass gap tell me how much water to add?

No. It only shows the difference between the removed sucrose and the calculated replacement weight. Water, carriers and other ingredients affect solids, flavor, process and stability. Resolve the mass balance within the complete formula.

04Can purity or Brix stand in for dry matter?

Do not assume they are interchangeable. Enter the as-received dry-matter values supported by your ingredient specifications or measurements. Leave them blank if unknown; the dry-solids result will remain unavailable.

05Is the cost change a saving for the whole finished product?

No. It compares only the removed sucrose cost with the replacement ingredient cost. Any mass/solids correction, other ingredients, processing, loss, packaging, filling, delivery and taxes are excluded.

06Does a 50% sucrose reduction mean 50% fewer label sugars or calories?

No. The target applies only to the entered sucrose weight. Other sugars and the complete replacement composition, recipe yield and destination-market labeling rules must be assessed separately.

07Can I use my own sweetener blend?

Yes. Choose your blend or another sweetener, name it and enter its relative sweetness on the same as-received weight basis. Use the actual blend factor, not the factor for a pure extract. Dry matter and price remain separate inputs.
