Start with a real control
Keep the current formula or full-sugar control, the same base temperature, freezing route, hardening condition, package and serving temperature. Add a sweetness-only candidate and a system candidate that also addresses solids, body or viscosity. Without the control, a softer sample can look better simply because the process changed.
Score the mix before freezing
Record product type, fat and protein, total solids, pH or acidity where relevant, mix temperature, apparent viscosity and stabilizer/emulsifier system. A drinkable plant base, a dairy ice cream mix and a sorbet should not share one acceptance target. The 2026 UK Food Standards Agency guidance also supports pairing sensory review with process and analytical information.
Separate sweetness from frozen structure
Taste sweetness onset, peak, aftertaste, bitterness, cooling effect and flavour release separately from hardness, iciness, graininess, creaminess, scoopability and mouth-coating. A high-intensity sweetener may restore perceived sweetness without restoring the grams of solids removed with sugar.
Record four physical checkpoints
Use four different notes: freezing point or ice content, mix or serum-phase viscosity, hardness or extrusion force, and melting onset/rate. Wageningen model research found that ice content and viscosity do not play identical roles, and a simplified 2026 model showed that smaller ice crystals can be associated with a harder connected structure. Compare the sample routes
A useful first round has three routes: current or full-sugar control; a candidate that mainly restores sweetness; and a candidate that changes sweetness together with solids, body, viscosity or stabilizer support. The 2025 Fiordilatte study found that overrun, melting, emulsification stability and sensory scores changed with replacement ingredient and level, so a single sweetness ranking is not enough. Repeat the score after storage
Record day 0, 7, 14, 21 and 35 when that window fits the project. Note storage temperature, package, temperature fluctuation and any freeze-thaw exposure. Check hardness, ice sensation, scoopability, meltdown, separation, flavour release and aftertaste again. Day-0 approval is not a shelf-life conclusion.
