Keep sweetness, sourness, aroma and aftertaste as separate observations instead of using one word such as fruitiness to cover all of them.
What belongs in the fruit beverage brief?
Write whether the project is NFC juice, a concentrate or reconstituted drink, a flavored fruit beverage, a fruit tea, a sparkling drink or another category. Add the fruit base, Brix or total soluble solids, pH or titratable acidity when available, acid system, sweetener system, aroma or essence direction, cloud or clarity target and serving condition. Why keep concentration and reconstitution visible?
A concentrate or essence is not judged in the same way as a finished drink. What changes after the heat step?
