APPLICATION GUIDE
Sweeteners for Beverages
Start with the actual drink and the role the sugar currently plays. Compare candidates at the same perceived sweetness before judging aroma, bitterness, body or finish.
What to test in the formula
| Function | Ingredient / Grade | Typical inclusion | Note |
|---|---|---|---|
| Sweetness timing | Monk fruit extract | Confirm in a trial | Use the same drink base and serving temperature. Score onset, peak and finish separately. |
| Sweetness and aftertaste | Stevia grades | Confirm in a trial | Screen with monk fruit extract and check bitterness and lingering sweetness at matched sweetness. |
| Body and sugar solids | Allulose with monk fruit | Confirm in a trial | Check whether the sugar reduction changes body. Compare the blend against the current control. |
| Dissolution and process fit | Custom beverage blend | Confirm in a trial | Record mixing order, acidity and any heat treatment. Compare the prepared drink before and after processing. |
Choose a blend to screen
Screen a monk fruit–stevia direction for sweetness and an allulose–monk fruit direction if replacing solids is also part of the brief. Keep the base and process constant so you can tell which change affected the result.
