Sugar-Reduced Gummies: Why Sweetener Alone Cannot Restore Texture
Direct answer: A high-intensity sweetener can restore sweet taste at a low use level. It cannot automatically replace the bulk, dissolved solids, water interactions and gel-supporting functions that leave with sugar. That is why a gummy can taste sweet yet feel thin, soft, sticky or short in the chew.

For a reduced-sugar gummy or jelly, treat sweetness and texture as related but separate questions. Keep a real control beside the new direction, then test the gel and water system in the finished product.
Sugar was doing more than making the gummy sweet
In a model confectionery gel study, sugar concentration changed taste, aftertaste and jiggly or chewy sensory attributes, while the authors also describe sugar's contribution to bulk, viscosity and preservation. Removing sugar therefore changes the physical system even when sweetness is restored. McKenzie, Lee and Lee (2022) is model-system evidence, not a commercial gummy formula.
The gel system still controls the bite
Gelatin, pectin, starch, carrageenan, konjac and blended systems do not create the same bite. Gel type can change hardness, springiness, cohesiveness, gumminess and chewiness, and a single hardness or Bloom number cannot describe the full eating experience. Start by naming the real gel system, acid, solids and process rather than asking only for a sweeter ingredient.
Equal sweetness can still mean a different chew
A 2024 pectin jelly study found that FOS and xylitol substitution changed pH, Brix, water activity, moisture, hardness, syneresis, color and sensory results in that model. A 2018 gummy jelly study likewise found gelatin and isomaltulose jointly affected toughness, stickiness, hardness, springiness and chewiness. These results support a wider scorecard; they do not establish a universal replacement route.
Give each ingredient a defined job
Monk fruit or stevia can provide a sweetness lift. Allulose, polyols, fibers, starches, hydrocolloids or other carriers may be considered for body or water management where the target market and product allow them. An erythritol-free project needs its own body and storage route. Do not describe one ingredient as restoring every function of sugar before the real matrix is tested.
Use three first-round sample routes
Keep the current or sucrose formula as the control. Compare it with a reduced-sugar direction that adds high-intensity sweetness, then a structure-adjusted direction that also changes solids or the gel system. An optional blend can test one defined trade-off. Hold the target sweetness, flavor, acid, process and package clear so a result can be attributed to the intended change.
Score the whole gummy, not one number
Record Brix or total solids, pH, water activity, moisture, hardness, springiness, cohesiveness, gumminess, chewiness, stickiness, syneresis, color and sensory sweetness. Add onset, peak, lingering sweetness, bitterness, metallic or licorice-like note, acid balance and flavor release. Repeat the relevant checks at day 0, 7, 14, 21 and 35 in the same package and storage conditions.
What this evidence does not prove
The cited studies do not provide a fixed sugar-replacement ratio, a universal shelf-life result, a global label conclusion or a performance guarantee for Hengliyuan products. China projects should begin with the current GB 2760-2024 notice and then review the exact product category, ingredient identity, use level and target-market rules.
